I bought an illegal steak (on purpose)

Apparently, this piece of meat that I just bought is illegal to buy. Oops. This is 7 pounds of 30-day dry-aged bone-in rib eye. Normally all this black stuff would be trimmed off, kinda like what I'm doing now, before it's sold to you. And that's where our drama begins. You see, I've watched a lot of videos of butchers trimming dry-aged steaks, and it always looked very satisfying. So, I decided I wanted to try it for myself. That's why I went to the grocery store to buy some untrimmed, dry-aged meat. Sounds easy enough, right? Well, the butcher told me it's illegal for him

to sell the meat to me untrimmed because if I ate the dark part and I got sick, I could sue him. America, am I right? I tried talking to the store manager and I even offered to sign a liability release form.

I really did. At the end of it all, I was still denied the steak. I left feeling defeated, but then I thought of you guys, my cheddar children. I knew I couldn't let you down. So instead of taking no for an answer, I decided to visit four other locations at the same grocery store until I found a butcher who was willing to sell me one untrimmed.
